Our baby pistachio kernels are foraged from the steep hillsides of Badghis in the north-west of Afghanistan. In late August, pistachio picking quotas are set for picking to begin in early September. These wild pistachios are foraged by hand by local communities and subsequently purchased by us. Because the pistachios are wild rather than farmed, they’re tiny in size and have intense flavors of pine and camphor. When you bite into one you’re met with a crunchy exterior, a tender core, and savory notes of pine and camphor.
