Our kishmish raisins come from vines in the Zabul province of southern Afghanistan. The grape that produces our naturally sweet “gummy bear” raisins is the Shungul Khani grape variety which has a distinctive long shape and bright green color. The grapes reach peak sweetness between September and October; they are initially dried on the vine then harvested and hung to air-dry in traditional huts called balakhanas. This produces kishmish raisins with a candy-like flavor profile and a slightly gummy texture.
